  • 5 scallions

  • 2 cups of pork or beef blood

Instructions to make Soondae

  1. First you need to make the sweet rice. Start by taking a bowl and filling it with the rice and washing it with water. Then soak the rice in water for 30 minutes. Now take the rice cooker and put the soaked rice after draining it with three and half cups of water. Let it cook for 45 minutes.

  1. Clean the pork intestine next with lukewarm then cold water and soak it in salt-water solution for an hour.

  1. Once the intestine is soaked in salt-water solution, cut it in 1-foot sections using cotton strings tied at the end of each section.

  1. Soak the vermicelli in lukewarm water until it softens and then chop it roughly.

  1. Finely chop your scallions, crush the sesame seeds after toasting it in medium-high flame on a pan.

  1. Peel 3 garlic cloves and ginger as well. Then make the paste of these two ingredients separately.

  1. Take a large mixing bowl and add garlic paste, ginger paste, sesame seeds. pork or beef blood, pepper, salt, chopped scallions, chopped vermicelli, sesame oil and sweet rice. Mix these ingredients nicely and your stuffing is ready.

  1. Then get a sausage stuffing machine or a funnel to fill your pork sausages with the mixture above. Do not over pack the sausages with the stuffing mixture and stuff each sausage lightly. Once you have stuffed all the sausages, tie the ends of the sausage so the both ends are secured.

  1. On medium flame place a pot on your stove and add salt-water solution to quart of water in the pot adding another teaspoon of salt. LEt the sausage boil in the water then turn the flame down and let it simmer for 45 minutes.
